The town Meryton in the novel Pride and Prejudice is thought to have been based on Hertford. Alfred Russel Wallace lived in there between the ages of five and thirteen and attended Hertford Grammar School. The band Deep Purple comes from Hertford. And for Harry Potter fans, Rupert Grint (Ron Weasley) comes from Hertford.
